This program is for transitioning service members interested in learning about working as a culinary team member or a cook in patient meal services. The trainee will learn to cook in a hospital environment where dietary restrictions impact the texture and ingredients in foods served. The program is adjustable for times in each training area depending on the length of time approved for the SkillBridge applicant to participate.

ABOUT THE JOB

During this training program, the student will develop the knowledge and skills in simple food preparation, patient meal assembly, meal delivery and customer service to inpatients and residents. Candidates will learn the processes and standards of a patient meal service operation and food safety and sanitation. Develop knowledge of FDA food safety guidelines and participate in ServSafe Manager training. Test and achieve certification. Develop knowledge of basic dietary restrictions for prescriptive diets such as Carbohydrate Controlled, Heart Healthy, texture modifications, fluid restrictions, and renal. Develop skills in proper knife use and techniques, basic cooking, modifying food textures, and advanced meal preparation using meal production sheets and recipes.Develop knowledge of efficient operations through Lean White Belt Training.

RESPONSIBILITIES
